What is the feeling on linking to specific manufacturers on reference pages? Is it preferred to link to their page here, to their main page, to the item page? I'd assume it's best not to say "Jablonsky has the best left-handed nostril inhalers!", but something like "Suppliers of left-handed nostril inhalers include Jablonsky".

I think the way you phrased it in the seconed sentence is much better (as you assumed). About the linking - it is preferred by us to link to their page here, there is a link to their site from there.

About incorporating images into the wiki- what's okay and what's not? I'm thinking, for instance, about vendor logos on their respective wiki pages? Is there a litmus test? Or should we contact people directly?

We like images in the wiki - it make it more colorful and more fun to read. It also can explain alot - one picture worth a thousends words....
